7 Easy Lunch Ideas for Everyday of the Week

Looking for quick and easy lunch ideas to prepare at home?

As someone who’s always trying to be productive while working from home, I’m all about simple and no-hassle lunch recipes that can be made quickly.

Or, leftovers from dinner the night before 😬

Whether you’re working from home or just don’t really enjoy cooking, you can definitely whip these lunch recipes up quickly.

Here are quick and easy lunch ideas you can prepare for everyday of the week!

Homemade fried rice is an easy lunch idea to make at home!
I tossed in leftover tandoori chicken, green beans, and corn into this homemade fried rice dish.

1. Garlic fried rice

Garlic makes everything better, and there ain’t nothing better than the smell of sautéed garlic.

Simply sauté garlic in oil or butter, throw day old rice in, then mix in eggs.

If you don’t have day old rice, just cook rice with less water so it’s not as moist.

Then, chop up and throw in whatever veggies and meat you have in your fridge!

2. Burrito bowl

Simply throw together cooked ground meat, corn, guac, and cheese on top of rice to make a simple burrito bowl.

I use the mild Old El Paso spice to cook my ground beef, but you can make your own spice mixture with cumin, paprika, garlic powder, onion powder, salt, and pepper.

Guac is typically made with avocado, onion, tomato, and salt, but I usually omit the tomato.

Here are toppings you can throw into your burrito bowl:

3. Salmon poké bowl

Poké bowls are super easy to make, and you can pretty much toss whatever you want in there.

I usually throw together salmon, corn, carrots, edamame, avocado on top of jasmine white rice.

Here are some other toppings you can add to your homemade poké bowl:

  • Shrimp
  • Tofu
  • Clementines
  • Chopped pears
  • Chopped pineapple
  • Sliced cucumbers
  • Kimchi
  • Seaweed salad

For sauce, you can make a homemade sriracho mayo or just use soy sauce.

Remember to freeze your raw salmon ahead of time so it kills off any potential parasites!

If you’re looking for something to drink with your salmon poké bowl, it’ll go great with an iced tea.

Homemade Asian salmon is an easy lunch idea to make at home!

4. Asian salmon

Marinate salmon with soy sauce and oyster sauce, then fry it up in some oil on a pan.

Boil some veggies and cook rice, then you’ve got a simple and healthy lunch meal prep idea!

I like to top my plain rice with Trader Joe’s Everything but the Bagel seasoning.

While there are no Trader Joe’s stores in Canada, you can grab the Everything But the Bagel seasoning online on Amazon!

Homemade chow mein is an easy lunch idea to make at home!
I added leftover lap cheong sausage and carrot into my chow mein noodles.

5. Chow mein noodles

Chow mein noodles are an easy yet delicious lunch recipe.

First off, boil the chow mein noodles until they’re cooked.

Sauté garlic and onions in oil, toss in the noodles, then mix in oyster sauce and soy sauce.

Then, chop up and throw in whatever veggies and meat you have in your fridge!

6. Shakshuka

Shakshuka is a delicious and easy recipe you can just throw into the oven.

If you want it to be quicker, you can cook it on the stove instead.

Chop up garlic, onions, and potatoes, throw in canned tomato and spices (paprika, cumin, and cayenne pepper), and crack some eggs.

If you’re a meat person, you can also chop up some chorizo sausage to throw in.

I based my recipe off of Girl Versus Dough’s shakshuka recipe.

7. Smoked salmon toast

A super simple lunch idea at home is smoked salmon toast.

It doesn’t taste as good if you meal prep it, but it’s wonderful if you have it fresh!

Smother cream cheese and mashed avocado on toast, top it with smoked salmon and poached egg, and you’ve got yourself a quick, easy, and healthy lunch recipe.

Feel free to top it with fresh or dried dill, capers, or even Trader Joe’s Everything but the Bagel seasoning!

Adam and I usually like to top our poached eggs with seasoned salt.

The best smoked salmon we’ve tried is the smoked steelhead salmon by Norwegian Fjord, which we get at Longo’s!
